Rich Chocolate Brownies

Dense, fudgy, full of dark chocolate.

Ingredients

  • 250 g dark chocolate, chopped
  • 200 g butter (plus a little extra for greasing)
  • 150 g raw cane sugar
  • 120 g white sugar
  • 70 g sugar beet syrup (or molasses/golden syrup)
  • 4 eggs
  • 200 g flour
  • 40 g cocoa powder
  • Pinch of salt

Instructions

  1. Preheat oven to 180°C (160°C fan). Grease and line a square baking pan (about 20×20 cm).
  2. Melt chocolate and butter together in a heatproof bowl over simmering water. Stir until smooth.
  3. Whisk in both sugars and syrup until combined.
  4. Let cool slightly.
  5. Add eggs one at a time, whisking briefly after each.
  6. Sift in flour and cocoa powder.
  7. Pour batter into the prepared pan and smooth the top.
  8. Bake for about 25–30 minutes — the center should still be slightly soft.
  9. Let cool completely before cutting into squares.

Tip: Add chopped nuts, chocolate chunks, or a pinch of espresso powder for extra depth of flavor, take care to slightly underbake.
