Rich Chocolate Brownies
Dense, fudgy, full of dark chocolate.
Ingredients
- 250 g dark chocolate, chopped
- 200 g butter (plus a little extra for greasing)
- 150 g raw cane sugar
- 120 g white sugar
- 70 g sugar beet syrup (or molasses/golden syrup)
- 4 eggs
- 200 g flour
- 40 g cocoa powder
- Pinch of salt
Instructions
- Preheat oven to 180°C (160°C fan). Grease and line a square baking pan (about 20×20 cm).
- Melt chocolate and butter together in a heatproof bowl over simmering water.
Stir until smooth.
- Whisk in both sugars and syrup until combined.
- Let cool slightly.
- Add eggs one at a time, whisking briefly after each.
- Sift in flour and cocoa powder.
- Pour batter into the prepared pan and smooth the top.
- Bake for about 25–30 minutes — the center should still be slightly soft.
- Let cool completely before cutting into squares.
Tip: Add chopped nuts, chocolate chunks,
or a pinch of espresso powder for extra depth of flavor,
take care to slightly underbake.
