Grandmas vegan/vegetarian Schmalzplätzchen (German lard cookies)

These traditional German cookies are typically made with lard, but actually, my grandma always used coconut fat. Substituting the butter with margarine gives a vegan version.

Ingredients

  • 250 g Biskin (coconut fat)
  • 125 g butter
  • 625 g flour
  • 300 g sugar
  • 2 packets vanilla sugar
  • 1 pinch of salt
  • 15 g ammonium carbonate (Hirschhornsalz)
  • cocoa for a chocolatey version (optional, or half with cocoa, half without)

Instructions

  1. Preheat oven to 180°C. Line two baking trays with parchment paper.
  2. Mix everything to a dough. If you want a chocolatey version, add cocoa to half of the dough.
  3. Form small balls (about 2 cm diameter), slightly flatten and place on the baking trays.
